Lactase Definition
What Is Lactase?

An enzyme which breaks down milk sugar or lactose. Lactase is an enzyme found in the class mammals. It is a ß-galactosidase which hydrolyzes lactose to galactose and glucose. In mammals the lactase enzyme is secreted from the intestinal villi, and exerts its effect on lactose in chyme. This enzyme is essential for digestive hydrolysis of lactose in milk. Its deficiency causes lactose intolerance. The optimum temperature for lactase is about 48 °C (118.4 °F) for its activity and has an optimum pH of 6.5.
